How to soak cod?

 

After cutting and before soaking, the slices must be rinsed in water to remove excess salt.

In a container place the pieces with the skin facing upwards and fill with water until the cod is covered, if possible the container should remain in the fridge (otherwise add ice cubes)

It is recommended to change the water every 12-12 hours to desalt the product well.

Soaking time depends on 4 factors:

– Caliber/size of the fish 

- Water temperature

-Proportion between kilos of cod and liters of water

-Type of cut (thin or high) made in Codfish
